Egg yolk oil/egg yolk extract is the oil extracted by supercritical carbon dioxide extraction technology at low temperature. The main components are egg yolk lecithin, vitamin A, vitamin D, etc. The appearance is yellow viscous paste or oily liquid. Lecithin is known as the "third nutrient" alongside protein and vitamin.
